Mexican Lasagna
1 pound hamburger, browned
1 package taco seasoning
1 can refried beans
12 uncooked lasagna noodles
2 1/2 cups water
2 1/2 cups picante sauce or salsa
2 cups sour cream
3/4 cup chopped green onion
1 can black olives, sliced (optional)
1 cup shredded Monterey Jack cheese
Combine hamburger, seasoning and refried beans.
In a 9 X 13 baking dish, layer 4 noodles, 1/2 of beef mixture, 4 noodles, other half of beef mixture and remaining 4 noodles.
Combine water and salsa, then pour evenly over layered noodles and beef.
Cover with foil and cook at 350 degrees for 1 1/2 hours or until noodles are tender.
Combine sour cream, onions, olives, then spoon over baked lasagna.
Top with cheese and bake 5 additional minutes or until cheese is melted.
