Zucchini Toasties

2 small zucchinis
1 Tbsp seasoned bread crumbs
3 Tbsp parmesan cheese
1 Tbsp vegetable oil
Preheat the broiler and move the oven rack to the lowest level in the oven. Wash the zucchini under cold running water. Slice the zucchini into thin rounds. Pour 1 Tbsp vegetable oil onto the cookie sheet and then spread it over the surface with a paper towel.
Arrange the zucchini rounds in a sigle layer on the cookie sheet. Broil the zucchini in the oven-broiler for 3-5 minutes or until tender. Leave the broiler door slightly ajar and do not brown or burn the zucchini. Remove from the oven to allow it to cool slightly.
Combine the bread crumbs and parmesan cheese together in a small bowl. Spoon the bread crumb mixture over the zucchini rounds. Return to the oven-broiler and cook for 2-5 minutes or until the tops are golden brown. Remove from the broiler and set aside to cook a bit before serving.
