Zucchini Brownies

2 cups flour

1½ cups sugar

1½ tsp baking soda

1 tsp salt

½ cup cocoa powder

1 egg, beaten

2 cups zucchini, unpeeled, grated

½ cup vegetable oil

2 tsp vanilla extract


Set the oven rack to the middle position. Preheat the oven to 350°F. Grease and flour a 9x13 inch baking pan.

Measure the dry ingredients into a large mixing bowl and stir to combine. In a second smaller bowl, combine the egg, zucchini, vegetable oil and vanilla. Make a well in the center of the dry ingredients; pour the zucchini mixture into the well. Stir just enough so that the dry ingredients are folded into the zucchini mixture.

Spread the brownies into the prepared baking pan. Bake for 25-30 minutes in the preheated oven, until the brownies spring back when gently touched. Cool in the pan and then cut into 24 bars.
