Twin Dragon Almond Cookies

3 cups all-purpose flour

1 tsp baking soda

½ tsp salt

1 cup granulated sugar

1½ cups shortening

1 Tbsp almond extract

2 Tbsp water

2 eggs, divided


Preheat the oven to 350°F and move the oven rack to the middle position in the oven.

Use ungreased cookie sheets.

In a bowl, mix the flour, baking soda, and salt.

In another large bowl, cream the sugar, shortening, almond extract, one egg (lightly beaten), and the water; add to the dry mixture and mix thoroughly.

Form the dough into 1-inch balls and place on the cookie sheets, 2 inches apart.

Apply light pressure to slightly flatten.

Beat the remaining egg well and with a pastry brush, brush each cookie lightly with the beaten egg. Sprinkle very lightly with sugar.

Bake for 10-20 minutes, or until cookies are lightly brown around edges.

Wait a minute or two before removing from the cookie sheets to cool on a rack.
