Lemon Blueberry Muffins

Biscuits are a favorite of the Cajuns. This biscuit recipe has been modified to utilize modern day Cajun favorites. Try them for breakfast or for cupper when a light meal is wanted.

2 cups flour

2 tsp baking powder

¼ tsp salt

1 egg slightly beaten

1 tsp grated lemon peel

⅓ cup sugar

½ tsp baking soda

8 ounces lemon yogurt

¼ cup melted butter

1 cup blueberries

Glaze

1 Tbsp lemon juice

½ cup powdered sugar

½ tsp grated lemon peel


Preheat oven to 400°F. Move oven rack to middle position.

Combine all the dry ingredients. Combine yogurt, egg, butter, and lemon peel. Add to the dry ingredients. Fold in the blueberries gently.

Drop onto a cookie sheet and bake at 400°F for 15 to 18 minutes.

Glaze: While the biscuits are baking prepare the glaze by combining the powdered sugar, lemon juice, and lemon peel.
