Green Beans with Sour Cream

1¼ lb green beans, cooked
1 Tbsp grated onion
2 Tbsp olive oil
2 Tbsp flour
¼ tsp pepper
1 tsp salt
1 tsp sugar
1 cup sour cream
¼ cup shredded Swiss cheese
1 ½ cups crushed corn flakes
1 Tbsp melted butter
Preheat oven to 375° F. Move oven rack to middle position.
Wash and snap the beans. Cook in a small amount of water for 3 minutes. Drain and set aside.
Saute onion in olive oil about 7 minutes.
Add flour, salt, pepper, and sugar.
Slowly mix in sour cream and bring mixture to a gentle boil, then immediately remove from heat. Fold in the green beans.
Pour into casserole. Sprinkle with cheese and then corn flakes.
Bake at 375° F for 20 minutes.
