Green Apple (Lodi) Applesauce

Note: Lodi are seasonal apples available in May-June at local orchards. They are very tart and they produce a applesauce with a slightly green hue. This is a great local food to purchase from your orchardists!

3 lbs Lodi apples

½ cup water

½-¾ cup sugar


Wash the apples under cold running water. Quarter the apples and remove the core. Cut into large chunks.

Combine the apples and water in a large saucepan. Cover and simmer until the apples are tender, about 15 minutes.

Spoon the apples into a food mill. Press the apples through the food mill and into a bowl beneath. Pour any remaining liquid into the sauce.

Sweeten to taste with ½-¾ cup of sugar. Store in the refrigerator until ready to serve or freeze in small containers for future use.
