Carrot and Cabbage Slaw

1 small head of cabbage, cut into thin shreds

1-2 cup carrots, shredded

1 cup coarsely grated cheese

1 medium apple with skin

2 Tbsp chopped parsley

2 Tbsp chopped chives

½ tsp celery seed

1 cup golden raisins

1 cup lowfat mayonnaise

6 tomatoes, cored and hollowed out


Mix together the shredded cabbage, carrots and coursely grated cheese.

Dice the apples and dip them in lemon juice so they don't discolor.

Add the parsley, chives, celery seed and golden raisins.

When ready to serve, combine with the mayonnaise.

Spoon into the center of each tomato and serve on a bed of lettuce.
